Ingredients

  • For the Chicken:

    • 1 pound boneless, skinless chicken breasts, cut into sandwich-sized pieces

    • 1 cup all-purpose flour

    • 2 teaspoons paprika

    • 1 teaspoon garlic powder

    • 1 teaspoon onion powder

    • 1/2 teaspoon black pepper

    • 1/2 teaspoon dried thyme

    • 1/2 teaspoon dried oregano

    • 1/2 teaspoon salt

    • 1 egg, beaten

    • 1/2 cup milk

    • Vegetable oil, for frying

  • For the Mashed Potatoes:

    • 2 pounds russet potatoes, peeled and quartered

    • 1/2 cup milk

    • 1/4 cup butter

    • Salt and pepper, to taste

  • For the Gravy:

    • 2 tablespoons butter

    • 2 tablespoons all-purpose flour

    • 2 cups chicken broth

    • 1/2 teaspoon black pepper

    • Salt, to taste

  • For the Sandwich:

    • 4 brioche buns, toasted

    • Optional: Coleslaw

Instructions

  1. Prepare the Chicken: In a bowl, mix flour, paprika, garlic powder, onion powder, pepper, thyme, oregano, and salt.

  2. In another bowl, whisk egg and milk.

  3. Dip each chicken piece in the egg mixture, then dredge in the flour mixture. Make sure the chicken is fully coated.

  4. Heat vegetable oil in a large skillet over medium-high heat.

  5. Fry chicken for 5-7 minutes per side, until golden brown and cooked through. Place on a wire rack to drain excess oil.

  6. Make the Mashed Potatoes: Boil potatoes until tender. Drain and return to the pot.

  7. Mash potatoes with milk and butter until smooth and creamy. Season with salt and pepper.

  8. Prepare the Gravy: Melt butter in a saucepan over medium heat.

  9. Whisk in flour and cook for 1 minute.

  10. Gradually whisk in chicken broth until smooth.

  11. Bring to a simmer and cook until thickened, about 5-7 minutes.

  12. Season with salt and pepper.

  13. Assemble the Sandwiches: Place a generous amount of mashed potatoes on the bottom bun.

  14. Top with a piece of fried chicken.

  15. Drizzle with gravy.

  16. Add coleslaw, if desired.

  17. Top with the other bun and serve immediately.

Notes

  • For extra crispy chicken, double-dredge it in the flour mixture.

  • You can use store-bought gravy and mashed potatoes to save time.

  • Adjust the seasonings to your personal preference.

  • Consider adding a slice of cheese for extra flavor.
